This tasting menu is a dedicated sensory map of Yunnan Province—a region defined by its towering mountain ranges, primordial tea forests, and rich red soils. Rather than focusing on a single style, The Earthy Alchemy Tasting Menu explores the profound versatility of the land.

Here, you will journey through three distinct expressions of Yunnan Red teas (Dian Hong), a potent and highly sought-after raw Pu-erh, and two unique, transformative intersections of tea and aged citrus. It is a collection built on contrast: shifting from airy, honeyed sweetness to deep, velvet spices, and ending in the complex, medicinal cooling notes of aged tangerine peels.

 

The Menu

1. Crimson Drift 
  • Origin: Pu'er Village, Yunnan Province

  • Vintage: 2025 | Varietal: Red Tea (4g)

  • The Profile: An ethereal, bright introduction to Yunnan’s black teas. It glides across the palate with a lively burst of lychee and wildflower honey, grounded gently by a comforting base of roasted sweet potato. It leaves behind a highly fragrant, airy sweetness and a beautifully lingering bouquet.

2. Tanned Red
  • Origin: Jingmai Mountain, Yunnan Province

  • Vintage: 2025 | Varietal: Red Tea (4g)

  • The Profile: Shaded by the ancient, biodiverse forests of Jingmai, this tea is incredibly complex and deeply textured. It is a dark, symphonic brew shifting between floral and fruity high notes, a dense core of dates, raisins, orange syrup, and rice, and a rustic undercurrent of smoky wood, pepper, saffron, and wet leather. Its mouthfeel is pure velvet.

3. Golden Needle
  • Origin: Fengqing, Yunnan Province

  • Vintage: 2025 | Varietal: Red Tea (4g)

  • The Profile: Hailing from Fengqing, the historic birthplace of Yunnan Red tea, this batch is composed of downy, golden-orange buds. It yields a smooth, comforting, and deeply satisfying liquor rich with notes of sweet potato, roasted chestnut, and an earthy base, balanced unexpectedly by a refreshing touch of mint and smoky wood.

4. Xi Gui (Raw/Sheng Pu-erh)
  • Origin: Xi Gui Village, Lincang, Yunnan Province

  • Vintage: 2024 | Varietal: Raw Pu-erh Tea (8g)

  • The Profile: Xi Gui is legendary among raw Pu-erh connoisseurs for its powerful Cha Qi (tea energy) and intense, direct personality. With an 8g portion, you can push this tea to its limits. It delivers a punchy, complex profile that highlights the wild, untamed nature of Lincang's old arbor trees—vibrant, deeply structural, and ending in a profoundly cooling, sweet aftertaste.

5. Green Tangerine Pu-erh
  • Origin: Yunnan Pu-erh stuffed in Xinhui Green Tangerine

  • Vintage: 2025 | Varietal: Pu-erh Tea (15g whole fruit)

  • The Profile: A brilliant fusion of geography. Earthy Yunnan Pu-erh is hollowed out and cured inside a fragrant, young green tangerine peel from Xinhui. The liquor is intensely aromatic, balancing a sharp bitterness and a cooling menthol lift with notes of lime, winey undertones, sandy sandalwood, a touch of musty antiquity, and the mouth-watering tang of a salty dried plum.

6. Vintage Ripe Pu-erh with Tangerine Peel (Chen Pi)
  • Origin: BoHai Village, Yunnan Province

  • Vintage: 2014 | Varietal: Ripe Pu-erh Tea (5g)

  • The Profile: A deeply comforting, decade-old medicinal treasure. This loose ripe Pu-erh is blended with aged Chen Pi (tangerine peel). The fierce citrus of youth has mellowed over twelve years into a dark, soothing elixir. It shares a similar lineage to the green tangerine—bitter, menthol, lime, winey, musty, sandalwood, and salty dried plum—but delivers them with the smooth, thick, and ultra-grounding warmth that only a well-aged ripe Pu-erh can provide.
