Resonant Cliffs Tasting Menu - Oolong Tea
Resonant Cliffs Tasting Menu A Sensory Map of Flame and Flower Six curated portions. Two legendary mountains. Resonant Cliffs is an immersive journey through the world of premium Oolong teas — mapping the intensely aromatic Dan Congs of Chaozhou against the dark, mineral-heavy Rock Teas of the Wuyi Mountains. Each portion is sized for individual, multi-steep Gongfu sessions, providing a masterful study of how intense fire, charcoal roasting, and distinct terroirs yield unparalleled complexity.
The Six Teas
-
Duck Shit (Ya Shi Xiang) — Oolong Tea, 4g | Chaozhou, 2025 Don't be fooled by the name; this is a highly prized Dan Cong. It opens with an intoxicating, honeyed sweetness backed by elegant wood and silver flower incense (Lonicera japonica).
-
Honey Orchid (Mi Lan Xiang) — Oolong Tea, 4g | Chaozhou, 2025 Extravagantly fruity and floral. A vibrant, sun-drenched profile overflowing with notes of ripe lychee, sweet osmanthus, and yellow gardenia.
-
Rock Tea (Yancha) — Omit Oolong Tea, 4g | Wuyi Mountain, 2024 A pristine, atmospheric introduction to cliff teas. Crisp apricot and rich almond layered over a base of pine wood smoke and a wet bamboo forest.
-
Cinnamon Pit (Rou Gui) — Oolong Tea, 4g | Wuyi Mountain, 2024 Bold, spicy, and deeply comforting. Evoking a warm sanctuary of smoky, woody sandalwood, a crackling fireplace, and damp, mossy moisture on woods after a fresh rain.
-
Da Hong Pao — Oolong Tea, 4g | Wuyi Mountain, 2023 The king of rock teas, aged to silky perfection. A heavy, complex landscape of dark chocolate, raisin, ashy minerals, nutmeg, and pine needles, finishing on sweet liquorice (süßholz/lakritz) and tobacco.
-
Windy Village — Oolong Tea, 4g | Wuyi Mountain, 2024 A fascinating study in contrast. Bright honey and crisp pear meet deep elements of charcoal, burnt hay, a unique fermented funk, and a distinct, savory-salty finish.
Brewing Notes All six teas are sized for Gongfu-style sessions. Use a small vessel (60–100ml), boiling water, and rapid steeps to capture the volatile floral aromas of the Chaozhou teas and the deep mineral infrastructure of the Wuyi rock teas. Recommended vessel: The Moss-Grown Stone Teapot or The Sedimentary Stone Teapot. The porous stoneware behaves like a heat mirror, taming the heavy charcoal roast and enhancing the thick, silky textures of the older vintages.

Rich teas with intense flavor like Pu-erh or black tea can be brewed not only in a teapot but also in a thermos bottle. Try it out and hear how a day of tea consumption will be provided with ease and warmth.
The mountain buds are plucked while yet the dew remains, emerald-green, unfurling in the bowl like a forest reborn in the steam.
