An Unfolding Floral Grace, Grounded in Earth. Despite its poetic name, White Peony (Bai Mudan) is completely unscented; its name is a tribute to its exquisite visual beauty. Composed of a graceful pluck of one tender bud cradled by two downy leaves, the dry foliage dramatically unfurls within the water during brewing, mirroring the elegant, slow blooming of a white peony flower. Harvested from the premier white tea terroirs of Fuding, Fujian, this selection beautifully bridges the gap between the pristine delicacy of Silver Needle and the robust, rich complexity of Shou Mei. Because White Peony naturally possesses a lower alkali content, the bright, natural floral notes completely eclipse the raw, grassy "milli-scent" of the fresh down. What remains is a dominant, incredibly elegant floral bouquet, supported by a subtle, velvety undertone that is beautifully mellow, sweet, and soft on the palate. The Rare Evolution: From Soy Milk to Plum This particular harvest is a rare and exceptional find. Young White Peonies of this caliber are distinguished by a remarkably distinct soy milk and bean fragrance—a prized hallmark of masterful processing and impeccable terroir. It is an evolving, living tea with immense aging potential: In Its Youth: The tea bursts with a comforting, savory-sweet aroma of fresh soy milk and beans, balanced by bright flowers and the deeply comforting, nostalgic notes of cacao, dried raffia, and the rustic warmth of a working man’s jacket. A rich finish of maple syrup lingers on the tongue. With Age: As this tea is stored and cured over the years, this vibrant bean fragrance will gradually and beautifully transform into a deep, sour-sweet, and highly coveted plum fragrance. The Spiritual Character: Mild & Neutral True to its Fuding roots, White Peony embodies a mild and neutral spiritual character. It offers an effortless equilibrium. It neither overstimulates nor dulls the senses, providing a harmonious, peaceful energy that gently clears the mind and settles the body into a state of quiet contentment. Recommended Occasions Lazy Afternoons: The perfect companion for when time stretches out and you want to watch the leaves slowly dance and bloom in the glass. Summer Days: Its clean, neutral profile offers a wonderfully refreshing and cooling energetic effect. Bright Mornings: A soft, sweet, and low-bitterness awakening that pairs beautifully with the early sun. Technical Brewing Guide To admire the majestic blooming shape of the leaves, you can brew White Peony in a clear glass vessel, or extract its deep, syrupy textures using a coarse, porous clay companion like The Moss-Grown Stone Teapot (pictured in brown pot2.jpeg). Tea-to-Water Ratio: 4g of White Peony leaves per 200 ml teapot. Water Temperature: 85°C – 90°C (185°F – 194°F). Feel free to use boiling water (95°C+) in later steeps to fully draw out the deeper maple syrup and cacao undertones. Endurance: Exceptionally resilient; can be mindfully steeped 6 to 10 times, evolving beautifully from a bright, soy-floral liquor into a deeply sweet, textured nectar.

A minimalist’s prayer, where sunlight and silence are the only artisans, preserving the ethereal sweetness of the bud.

白茶 White Tea

White tea is poetry untouched by fire. It earns its name from the radiant, silvery-white down that blankets the tender buds from the moment they are plucked to their final awakening in your cup.

Serene, sweet, and grounding, this tea can be savored through all the seasons of the year. Its alchemy lies in restraint; it is traditionally crafted without roasting or rolling, simply basking in the sun and wind to preserve the highest expression of its active enzymes and natural polyphenols. The primary expressions of this delicate craft include the revered Baihao Yinzhen (Silver Needle), Baimudan (White Peony), Gongmei, and Shoumei.

We currently offer a rare, small-batch harvest from the high, mist-shrouded elevations of Fujian. Rooted in soft, mineral-rich soil between 680 and 700 meters above the sea, these vibrant yellow-green leaves are gently polished by local artisans. The resulting infusion is profoundly quenching, offering a delicate sweetness without a trace of bitterness.

How to brew white tea:

Amount: 4g of tea leaves per 200ml vessel

Temperature: 85°C to 95°C water

Time: Wash the leaves briefly. Steep for 20 seconds for the first 3 infusions, adding 5 to 10 seconds for each steep thereafter

Technique: Pour the water gently in a slow circle, aiming for the inner wall of your teapot to avoid bruising the leaves

The mountain buds are plucked while yet the dew remains, emerald-green, unfurling in the bowl like a forest reborn in the steam.
