Despite its poetic name, White Peony (Bai Mudan) is completely unscented; its name is a tribute to its exquisite visual beauty. Composed of a graceful pluck of one tender bud cradled by two downy leaves, the dry foliage dramatically unfurls within the water during brewing, mirroring the elegant, slow blooming of a white peony flower.

Harvested from the premier white tea terroirs of Fuding, Fujian, this selection beautifully bridges the gap between the pristine delicacy of Silver Needle and the robust, rich complexity of Shou Mei. Because White Peony naturally possesses a lower alkali content, the bright, natural floral notes completely eclipse the raw, grassy "milli-scent" of the fresh down. What remains is a dominant, incredibly elegant floral bouquet, supported by a subtle, velvety undertone that is beautifully mellow, sweet, and soft on the palate.

The Rare Evolution: From Soy Milk to Plum

This particular harvest is a rare and exceptional find. Young White Peonies of this caliber are distinguished by a remarkably distinct soy milk and bean fragrance—a prized hallmark of masterful processing and impeccable terroir. It is an evolving, living tea with immense aging potential:

  • In Its Youth: The tea bursts with a comforting, savory-sweet aroma of fresh soy milk and beans, balanced by bright flowers and the deeply comforting, nostalgic notes of cacao, dried raffia, and the rustic warmth of a working man’s jacket. A rich finish of maple syrup lingers on the tongue.

  • With Age: As this tea is stored and cured over the years, this vibrant bean fragrance will gradually and beautifully transform into a deep, sour-sweet, and highly coveted plum fragrance.

Technical Brewing Guide

To admire the majestic blooming shape of the leaves, you can brew White Peony in a clear glass vessel, or extract its deep, syrupy textures using a coarse, porous clay companion like The Moss-Grown Stone Teapot (pictured in brown pot2.jpeg).

  • Tea-to-Water Ratio: 4g of White Peony leaves per 200 ml teapot.

  • Water Temperature: 85°C – 90°C (185°F – 194°F). Feel free to use boiling water (95°C+) in later steeps to fully draw out the deeper maple syrup and cacao undertones.

  • Endurance: Exceptionally resilient; can be mindfully steeped 6 to 10 times, evolving beautifully from a bright, soy-floral liquor into a deeply sweet, textured nectar.
