Wild White 野白
A Taste of the Sun, the Mist, and the Wild.
Grown in the untamed, high-altitude ecological zones of Fuding, Fujian, Wild White (Ye Xiao Bai) is crafted from a traditional, small-leaf mother tree species. Born in a pristine terroir perched between 680 and 700 meters above sea level, these ancient tea trees thrive in a unique, nutrient-dense sandy soil.
Here, the environment does the work. Wrapped in a perpetual embrace of mountain clouds and heavy morning mists, the tea plants endure a sharp temperature drop between day and night, balanced by abundant, radiant daytime sun. This dramatic climate yields bright yellow-green leaves that are naturally rich in nutrients and remarkably low in bitterness. When brewed, it reveals a profoundly sweet, fresh, and pristine liquor that honors its wild origin.
The Art of the Three-Day Sun-Wither
To capture the true spirit of Fuding white tea, Wild White is processed using a meticulous, traditional cooling and withering technique that moves with the natural rhythm of the day:
-
The Dawn Laying: Freshly plucked, dew-kissed leaves are gently laid out on traditional bamboo mats to cool and breathe.
-
The Midday Retreat: As the morning sun rises and the thick mountain fog dissipates, the leaves are moved to shaded, naturally ventilated shelves to wither in moderate humidity until 3:30 PM.
-
The Golden Hour Bask: From late afternoon until 6:00 PM, the tea is brought back outside to catch the soft, direct rays of the setting sun.
This rhythmic dance between sun and shade is painstakingly repeated for three days. Afterward, the leaves undergo a natural greening process before a final, gentle low-temperature mechanical drying brings the moisture content safely below 6%—locking in its aging potential and lively character.
The Tasting Experience: From Sun to Charcoal
Wild White carries a deeply evocative fragrance profile that shifts across steeps. It opens with the crisp, clean aroma of bamboo leaves and fresh-cut greens, before blossoming into an elegant bouquet of floral notes and rich honey. As the session deepens, you will discover comforting, grounded undertones of toasted almond and a faint, nostalgic whisper of a charcoal fire—reminiscent of a quiet, sunny afternoon in the mountains.
The Spiritual Character: Mild & Neutral
In the philosophy of Chinese tea culture, Wild White embodies a mild and neutral spirit. It is a tea of balance, neither too aggressive nor too delicate. It centers the mind, cools the body, and cleanses the palate without overwhelming the senses, making it an incredibly grounding companion for quiet reflection.

Technical Brewing Guide
To fully appreciate the unfolding layers of Wild White, we recommend brewing Gongfu style using a fine-pored stone vessel, such as The Sedimentary Stone Teapot (pictured in IMG_7006 Large.jpeg), or a traditional gaiwan.
-
Tea-to-Water Ratio: 4g of tea leaves per 200 ml teapot.
-
Water Temperature: 85°C – 90°C (185°F – 194°F) for a sweeter, more floral profile; up to 95°C (203°F) to coax out the deeper almond and charcoal notes in later steeps.
-
Endurance: Highly resilient; can be steeped 6 to 10 times, with the liquor evolving beautifully from fresh and crisp to deeply sweet and honeyed.
