Volcanic Ash Tasting Menu A Sensory Map of Fire, Earth, and Pine Six curated portions. One transformative landscape. Volcanic Ash is a deep-dive journey across two provinces, exploring how fire, mineral-rich soils, and charcoal smoke shape the leaves.

Moving from a resinous, rain-soaked mountain cliff oolong to heavy, aged citrus and deep, velvet-spiced earth. Each portion is sized for individual, multi-steep Gongfu sessions, making this the ideal introduction to the contrasting profiles of Yunnan and Fujian's terroirs.

The Six Teas

  1. Snapped Pine — Oolong Tea, 4g | Wuyi Mountain, 2024 A dramatic, volcanic cliff opener from Fujian. Notes of wet wood after rain, a smoky fireplace, pine trees, pine nuts, and a bright, lifting hint of bergamot.

  2. Green Tangerine Pu-erh — Pu-erh Tea, 15g whole fruit | Yunnan × Xinhui, 2025 Earthy Yunnan Pu-erh cured inside a fragrant young green tangerine from Xinhui. Intensely aromatic — lime, menthol, salty dried plum, sandy sandalwood, and a hint of winey antiquity.

  3. Ripe Pu-erh with Aged Tangerine Peel (Chen Pi) — 5g | BoHai Village, 2014 A decade-old medicinal treasure. Loose ripe Pu-erh blended with aged Chen Pi. The fierce citrus of youth has mellowed into a dark, soothing warmth. Bitter, menthol, lime, winey, and deeply grounding.

  4. Xi Gui — Raw Pu-erh — 8g | Xi Gui Village, Lincang, 2024 Clean, punchy, and wild. Moving away from the forest and hay into a landscape of wet rock, grass, and soft chamomile. Deeply structural with a intensely sweet, cooling return.

  5. Tanned Red — Red Tea, 4g | Jingmai Mountain, 2025 Dense and symphonic. Dates, raisins, orange syrup, smoky wood, saffron, and wet leather. Mouthfeel: pure velvet.

  6. Golden Needle — Red Tea, 4g | Fengqing, 2025 From the historic birthplace of Yunnan Red tea. Sweet potato, roasted chestnut, a touch of mint and smoky wood. Deeply comforting.

Brewing Notes All six teas are sized for Gongfu-style sessions. Use a small vessel (60–100ml), boiling or near-boiling water, and short, repeated steeps to explore how each tea evolves. Recommended vessel: The Moss-Grown Stone Teapot. Its handmade, iron-rich stoneware effortlessly anchors the wild smoke of the Wuyi oolong and smooths out the intense, medicinal notes of the aged citrus and Pu-erhs.

Brewing Methods

Rich teas with intense flavor like Pu-erh or black tea can be brewed not only in a teapot but also in a thermos bottle. Try it out and hear how a day of tea consumption will be provided with ease and warmth.
